If your New Year’s resolution is to eat better, the recipes in our Healthy Holidays series are an excellent way to start. This Chicken Pomodoro Pasta is full of rotini, basil, tomatoes, and white meat chicken, just like our soup– simple ingredients with fresh flavor. You can whip it up in just 10 minutes and tastes great served hot or cold.

Chicken Pomodoro Pasta
Serves 4


• 3 boneless, skinless white meat chicken breasts, cooked and cut into small pieces
• 1 lb. Rotini pasta
• 2 bunches fresh basil, chopped
• 4 tomatoes, chopped (or chopped canned tomatoes)
• 3 tbs olive oil
• 1 tsp dried oregano and rosemary

Cook pasta in a pot of boiling water with one tablespoon olive oil until al dente (slightly firm) and drain. While the pasta is cooking, chop basil, tomatoes, and chicken. Transfer to a large bowl. Drizzle 2 tablespoons olive oil over pasta and toss to coat. Mix in basil, tomato, dried herbs, and chicken pieces. Season with a little salt and fresh cracked pepper. Enjoy!
